Can you build a first version (MVP) first?

Yes, that's the recommended start. The scoping meeting sets the smallest version customers would pay for; the rest goes on the roadmap for later versions.

How do subscriptions get paid?

It depends on your market. Showroom213 handles plans and renewals itself; for card payments, providers like Stripe or Chargily can be connected. The choice is made during the scoping meeting.

Do you stay after the launch?

Yes, if you want. A SaaS keeps changing after launch: maintenance and new features can be included in the quote, as I do for my own product.
